Banana Bread

So I have always made banana bread…it’s just something you do when you have 3 old bananas. It’s an assumed thing to do. The kids even know to leave 3 bananas or they choose to. Do you all make banana bread as a regular thing in your household? It’s so good for after school snacks and my son loves it for breakfast. It’s a favorite in our home. My Dad stops up for some too, and a coffee of course. Let me share my recipe with you so you can make it too! It’s delicious!

Banana Nut Bread

3 bananas crushed to a pulp

1 cup of sugar

1/2 cup of melted butter

2 eggs

1 teaspoon baking soda dissolved in 1 tablespoon of boiling water

2 cups flour

1/2 cup of walnuts (optional)

1 tsp vanilla

Bake 1 hour in slow oven 300*

It’s done when  a toothpick is poked into the center and comes out clean.

But here’s the thing! We decided to cook our banana bread in muffin tins. That’s right. Muffin tins. I’ll tell you how to make it. The same recipe. Now you take a 12 muffin tin and put your paper liners in there and fill them 3/4 full of batter. Preheat oven to 325*.  Bake them for 20-22 mins. And then take them out of the pan and cool on cooling rack. There should be enough batter for about four more muffins. And again bake them for about 20-22 mins or until the toothpick comes out clean. It’s quicker to cook these muffins and the kids love them. Just grab and go kind of snack. You’re welcome and enjoy!
