Dreamy Coconut Chocolate Cake with Coconuty Cream Cheese Frosting :-)

Hi everyone! I have found an amazing recipe! I thought this blog would be about deals and discounts but today I have to say I found a recipe. You’ll love it only if you love coconut and chocolate! Yummy! So we just celebrated my Momma’s 62nd birthday! She asked for a chocolate cake with coconut cream cheese frosting! And it was amazing! Moist! And rich with chocolate! So I wanted to share with all of you! Here it is.

Dark Chocolate Cake

2 cups of sugar

1 3/4 cups all purpose flour

3/4 cup of Hershey’s cocoa, I used dark.

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

2 eggs

1 cup milk

1/2 c olive oil

2 teaspoons coconut extract

1 cup boiling water

Directions: Heat oven to 350*, grease and flour two 9inch round cake pans. (I used 8 inch because that’s what I have, and so it takes a little longer to cook) Mix together dry ingredients, and in separate bowl mix wet ingredients.  Slowly add the wet to the dry and mix with a mixer on medium speed. Add 1 cup boiling water, mix will be thin. Pour into prepared pans. Bake 30-35 minutes and if using 8 inch pans it will take a few minutes longer. Bake until toothpick inserted into center comes out clean. Cool for 10 minutes before removing from pan.


Coconut Cream Icing

1 8 oz package of cream cheese softened

1/2 c butter softened

4 cups confectioners’ sugar

2 tablespoons heavy cream

1/2 teaspoons salt

1/2 teaspoon of coconut flavoring( used like 2 tsps,  but just add a little and taste it to be sure)

1 teaspoon of vanilla extract

1/2 cup sweetened shredded coconut

1 cup sweetened shredded coconut, toasted (recipe below)


Beat cream cheese and butter until fluffy, add coconut and  vanilla flavoring. Add heavy cream, salt. Add in confectioners’ sugar 1 cup at a time. Continue beating until smooth and spreadable. Add more heavy cream if too thick or more confectioners’ sugar if too thin. Add untoasted coconut.

**To toast coconut** spread in single layer on a baking sheet. Preheat oven to 350*.Bake for 10 minutes checking it after about 5 minutes to see if browning. Stir it around for even browning.

Frost cake, sprinkle toasted coconut on top, reserving some for sides and 2nd top. Place 2nd cake on top, frost top, and sides and sprinkle toasted coconut on top and sides. Pour glass of milk and enjoy. The best cake! My mom and son said it was the best tasting and moistest cake ever! I was super happy! Talk to you all soon! 🙂
